Vanilla Birthday Cake Cookies

Nothing is more comforting than a piece of sweet-smelling, luscious vanilla birthday cake.  Often decorated with colorful frosting or sprinkles, it provides a quick transport back to childhood celebrations, large or small.  It’s one of those things that is special in a way that is simple and yet hard to capture.

This recipe is revolutionary in that it allows you to truly make a vanilla birthday cake in the form of a cookie.  It’s not a cake that pretends to be a cookie, nor a cookie that pretends to be a cake.  It’s a solid, sturdy cookie that doesn’t break easily, and bakes into a round disc that’s thick enough to poke a birthday candle into if you want.  The cookie has a creamy, vanilla-forward taste and a melt-in your-mouth texture that comes from a surprising ingredient-cream cheese.  The dough is somewhat sticky, but your cookie scoop will allow you to handle it effortlessly.  Colored jimmie sprinkles on the outside of the cookie bake into an intricate lattice in the oven that tasted a lot like frosting when cooled.  People will be tempted to pick up one of these goodies because of the festive sprinkles on the outside, but they will go back for a second one because of the unforgettable mouthfeel.

Make this cookie for a casual birthday celebration, as a sweet something to take the edge off potent cocktails at an after-hours event, or anything in between.

The recipe below is for a cookie that tastes like a dense yellow cake. It has a distinctive texture that comes from an unexpected ingredient – cream cheese.  The dough is rolled generously in colorful sprinkles, which melt in the oven to form a tight, multi-colored lattice that tastes much like frosting when cooled.  These work well for birthdays, or any time you want to add something colorful to an assortment of baked goods.  If you set a plate of these out on a dessert buffet, people will be enticed to take one because of the colorful sprinkles.  They will go back to get a second one after they experience the familiar vanilla cake flavor and unforgettable mouthfeel of the cookie.  I urge you to try these – they just might become your new favorite.

Ingredients:

2 and ¼ cups (11.3 oz) all-purpose flour

½ tsp baking powder

¼ tsp baking soda

¼ cup (1/2 stick) salted butter, softened

1 8 oz package cream cheese, softened

1 and 1/2 cups white sugar

1 and ½ tsp vanilla extract

1 large egg

1 cup multi-colored jimmie sprinkles

Directions:

Preheat oven to 350° F.   In a medium bowl, sift together flour, baking soda and baking powder; set aside.   Place softened butter, softened cream cheese, sugar, and vanilla in the bowl of an electric mixer fitted with the whisk attachment. Mix on medium-high speed for 2 minutes.  Add egg and mix on medium-high speed for another minute.  Turn mixer to low speed and add flour mixture one large spoonful at a time until fully incorporated.  Turn off mixer, scrape bottom and sides of bowl with a rubber spatula, then mix on medium-high for 15 more seconds.  The dough will be soft and slightly sticky.

Line a metal cookie sheet with parchment paper, and place jimmie sprinkles in a small bowl.  Using a 2 Tbsp cookie scoop, drop a scoop of dough into the bowl of sprinkles.  Pour sprinkles over the top of dough to cover.  Using your thumb and middle finger, lightly grip the middle of the ball of dough by the middle.  Gently roll the edges in the sprinkles until the entire ball is fully covered in sprinkles and somewhat flattened.

Repeat this process for 9 dough balls and place them on parchment paper, evenly spaced out.  Bake for 12 minutes, or until cookies are slightly puffed up and centers do not appear jiggly. Transfer parchment paper to a wire rack to cool.  When cookies are fully cooled, remove from parchment paper.   Repeat with remaining dough – you should have between 2 and 3 sheets of cookies total.

Mint Chocolate Chip Ice Cream Cookie

Need a green cookie for St. Patrick’s Day? This one will definitely do the trick. This is my first ice cream cookie, with quite a few more to follow. I discovered that if I replaced some of the flour in my drop sugar cookie recipe with milk powder, the result was an ever-so-slightly sticky, creamy tasting cookie I could adapt to transmute all my favorite ice cream flavors into cookie form. This version contains green coloring, mint extract, a little vanilla, and chopped bittersweet chocolate. Any mint chocolate chip ice cream fan will be thrilled, and people will be charmed by the way it looks JUST LIKE the ice cream. And I promise, it tastes like it too. May your St. Patrick’s Day be lucky this year!

Ingredients:

1 and 1/2 cups (7.5 oz) all-purpose flour

½ tsp baking soda

½ cup (1 stick) salted butter, softened

2/3 cup +1/4 cup white sugar

3 Tbsp milk powder

1 tsp mint extract

1/2 tsp vanilla extract

8 drops green +2 drops blue food coloring

1 large egg

1 tsp distilled white vinegar

1 4 oz. bittersweet chocolate bar, chopped

Directions:

Preheat oven to 325°.  Sift flour and baking soda together in a medium bowl; set aside.  Place softened butter, sugar, powdered milk, vanilla and mint extract in the bowl of an electric mixer fitted with the whisk attachment.  Mix on medium-high speed for 2 minutes.  Turn off mixer and scrape the bottom and sides of bowl with a rubber spatula.  Add egg and vinegar and mix for on medium-high for 1 more minute.  Turn mixer speed to low and add flour mixture one large spoonful at a time until fully incorporated.  Turn off mixer, scrape the bottom of and sides again with a rubber spatula, and then mix on high speed for 15 seconds. Using a spatula, stir in chopped chocolate until evenly incorporated.

Line a metal cookie sheet with parchment paper.  Using a 2 Tbsp cookie scoop, put 9 scoops of dough on cookie sheet, evenly spaced apart.  Bake for 10 minutes, or until cookies appear to be fully baked.  Remove from oven and transfer parchment paper to a wire cooling rack.  When cookies are fully cooled, peel them from the parchment paper and transfer them to an airtight container.

Chocolate Strawberry Cookies

It’s almost Valentine’s Day! I have never bought into the idea that you have to have a romantic partner to enjoy February 14th. Heart-shaped cards, chocolate, and all things pink, red, purple, and sparkly have always been more than enough for me. The chocolate-covered strawberry is arguably the pinnacle of Valentine’s Day, at least edibly speaking. The red color and sweetness of the strawberry is given a glamorous upgrade with a chocolate coating.

A decade or so ago, I was wandering the aisles of the specialty grocery store down the street from my house when I saw some cartons of dried strawberries. Not the freeze-dried kind that have now become popular – these were soft-dried, with a texture more like raisins. I thought ‘those look tasty, but what would I do with them’? Later I thought of a chocolate cookie recipe I had, and wondered if it would work to bake pieces of the dried strawberries into the dough, along with some milk chocolate chips, for a sort of chocolate-covered-strawberry cookie.

A month or two later, I finally decided to go for it. I went back to the specialty store, bought a small carton of strawberries, and made the cookies as planned…and life has never been quite the same since. The strawberries were even better than I imagined, with the taste of a strawberry fruit rollup. These cookies are extra chocolatey, and the chewy dried fruit and chocolate chips add some textural variation. The cookies also have delightful crinkly tops, and the add-ins give them a chunky look. A chef told me this was the best cookie of her life (seriously!) Several people who have eaten these have described them as ‘filled with love’.

So, whatever your romantic situation is at Valentine’s this year, I hope you too are ‘filled with love’. If you need something to bring to a Valentine’s Day gathering, I guarantee these will be a hit. Happy Baking!

Ingredients:

2 eggs

1/2 cup granulated (white) sugar

¼ cup + 2 Tbsp cup light brown sugar

¼  cup (1/2  stick) salted butter

3.5 oz. semi-sweet chocolate, chopped

2.5 oz. unsweetened chocolate, chopped

3 Tbsp flour

1/8 teaspoon baking powder

1/2 cup milk chocolate chips

1/2 cup coarsely chopped, natural dried strawberries (see tips below).

Directions:

Sift flour and baking powder together in a small bowl; set aside.  Melt butter and chocolates in a small saucepan over low heat, stirring occasionally.  Remove from heat and cool for 10 minutes.  Preheat oven to 350° F.   Place sugars in the bowl of an electric mixer fitted with the whisk attachment.  Add eggs and mix on medium-high speed for 3 minutes, or until mixture appears pale yellow, thick and frothy.  (This step is critical to the texture of the final cookies.)  Using a small rubber spatula, scrape chocolate mixture from saucepan into bowl and stir until fully incorporated.  Add flour and baking powder to bowl and stir until just combined.  Add dried fruit and chocolate chips and stir to incorporate.  Cover bowl and allow dough to thicken for 20 minutes (do not chill).

When dough is done thickening, line a cookie sheet with parchment paper.  Using a 2 Tbsp cookie scoop, place 9 scoops of dough on sheet, evenly spaced apart.    Bake for 10-12 minutes, or until centers appear set.  Allow cookies to cool for about 5 minutes on metal sheet, then transfer parchment paper to a wire cooling rack.  When cookies are fully cooled, peel from parchment paper and transfer to an airtight container to store.

Frosted Lemon Sunshine Cookies

I cannot believe tomorrow will be the last day of August! It’s unbearably hot here in Austin, so no shortage of sunshine! I have been meaning to post this cookie for awhile. It’s a great way to enjoy a last burst of summer flavor before the fall flavors take over. I made these for one cookie sale this summer and was requested by a customer to pleeease make it for the next sale as well, which I did. This is a lemon cookie with an extra layer of complexity given by orange extract.  The frosting, made sweet-tart by lemon juice and more orange extract, completes the taste and makes them oh-so-fragrant.  The sprinkles on the top are optional but add some color and make the cookies festive.

Tips: Do not be tempted to omit the lemon juice in the dough – the acid is needed to react with the baking soda!

It’s good to grate the lemon zest with a microplane – this makes very small pieces of zest that you won’t taste in the actual cookie.

Ingredients:

Cookie Dough:

1 and 2/3 cup (8.7 oz.) all-purpose flour

½ tsp baking soda

½ cup (1 stick) salted butter, softened

1/2 +1/3 cup white sugar

1 Tbsp. lemon zest (from 1 lemon

¼ tsp pure orange extract

1 large egg

1 tsp fresh lemon juice

Frosting:

1/4 cup salted butter, melted and cooled

1 and 1/4 cup powdered sugar

1/8 tsp pure orange extract

2 Tbsp fresh lemon juice

¼ cup yellow and orange sprinkles (optional)

Directions:

Preheat oven to 375°.  Sift flour and baking soda together in a medium bowl; set aside.  Place softened butter, sugar, lemon juice and orange extract in the bowl of an electric mixer fitted with the whisk attachment.  Mix on medium-high speed for 2 minutes.  Turn off mixer and scrape the bottom and sides of bowl with a rubber spatula, add egg and lemon juice,  and mix for on medium-high for 2 more minutes.  Turn the mixer speed to low, and add flour mixture one large spoonful at a time until fully incorporated.  Turn off mixer, scrape the bottom of and sides again with a rubber spatula, and then mix on high speed for 15 seconds.

Line a metal cookie sheet with parchment paper.  Using a 2 Tbsp cookie scoop, put 9 scoops of dough on cookie sheet, evenly spaced apart.  Bake for 12 minutes, or until edges are slightly browned.  Remove from oven and transfer parchment paper to a wire cooling rack.  When cookies are fully cooled, remove them from the parchment paper and transfer them to an airtight container.

When ready to frost, put ¼ cup salted butter in a small microwave-safe bowl, preferably one made of glass.  Melt butter, and wait until it is fully cooled, 10-15 minutes.  It should be about halfway solid at this point.  Add powdered sugar, and lemon juice to the bowl, and stir with a small whisk or fork until all lumps of powdered sugar are gone and frosting is smooth.  Add milk to thin if necessary.  Spread frosting over cookies using a butter knife or the back of a small spoon.  Add sprinkles if using (I hope you are)!

Tips:

  • You should get enough lemon zest and juice for this recipe from one large or two small lemons.
  • Orange extract can be omitted or replaced with lemon extract if you prefer, but it is what gives the cookie and frosting a unique flavor.

Perfect Circle Sugar Cookies

Evenly sized sugar cookies, stacked to perfection!

Raise your hand if you’ve ever had your kids ask you to decorate sugar cookies, and you said no because it was too much work to make sugar cookies. I’m actually not raising my hand because I don’t have kids, but I’ve seen this play out with my niece and nephew. Sugar cookies are a favorite but sometimes rolling them out is too much work.

For my collection of cookies to make with a cookie scoop, I knew I had to have a sugar cookie. Traditional sugar cookies are made with baking powder, which makes them puff UP in the oven, and therefore a are rolled with a rolling pin so they will bake out thin and flat. I needed a cookie dough that could be scooped and would expand outward into a flat circle. Oh, and taste like the vanilla sugar cookies my mom has been making since before I was born. It was a tall order.

I looked around for ideas, and many either didn’t work or didn’t taste like sugar cookies at all. I even invented a couple of other cookies in the process, which I am excited to share with you in the coming weeks. The cookies below are perfect if someone wants to whip up some sugar cookies. The dough does not require chilling. Instead of baking powder, the dough uses baking soda and distilled vinegar to expand outward when baked. This creates a medium-thick, flat circle. Don’t be tempted to skip the vinegar – it leaves no taste, and the baking soda needs it to activate. I have included my basic frosting recipe, but of course it’s totally optional.

Ingredients:

1 and 2/3 cups (8.3 oz) all-purpose flour

½ tsp baking soda

½ cup (1 stick) salted butter, softened

2/3 cup +1/4 cup white sugar

1 tsp vanilla extract

1 large egg

1 tsp distilled white vinegar

Frosting:

¼ cup (1/2 stick) salted butter, melted and cooled

1 and 1/2 cups powdered sugar

½ tsp vanilla extract

1 Tbsp milk

Directions:

Preheat oven to 350° F.  Sift flour and baking soda together in a medium bowl; set aside.  Place softened butter, sugar and vanilla in the bowl of an electric mixer fitted with the whisk attachment.  Mix on medium-high speed for 2 minutes.  Turn off mixer and scrape the bottom and sides of bowl with a rubber spatula, add egg and vinegar, and mix for on medium-high for 2 more minutes.  Turn the mixer speed to low and add flour mixture one large spoonful at a time until fully incorporated.

Bake for 10 minutes, or until edges are starting to brown.  Remove from oven and transfer parchment paper to a wire cooling rack.  When cookies are fully cooled, peel them from the parchment paper and transfer them to an airtight container. Repeat with a second sheet of cookies.

When ready to frost, put ½ stick salted butter in a small microwave-safe bowl, preferably one made of glass.  Melt butter, and wait until it is fully cooled, about 10 minutes.  It should be starting to harden back up at this point.  Add powdered sugar, vanilla and milk to the bowl, and stir until all lumps of powdered sugar are gone and frosting is smooth.  Add more milk to thin if necessary.  Spread frosting over cookies using a butter knife or the back of a small spoon.  Add sprinkles or decorative colored icing as desired.
